3 lb baked red potatoes
2 cups sour cream
4 cups shredded cheddar cheese
salt and pepper to taste
- Preheat oven to 350°. Cut baked potatoes into 1-in. cubes. (to speed up the prebaking- I popped the potatoes in the microwave for 5-10 minutes) Place half in a greased 13×9-in. baking dish. Sprinkle with half of the salt, pepper and bacon. Top with half of the sour cream and cheeses.
- Repeat layers.
- Bake, uncovered, 20-25 minutes.
Potatoes, cheese, bacon and sour cream- need I say more?!
