#87 Twice Baked Potatoes



2 Large Potatoes

1/2 cup sour cream

1/4 cup milk

2 tablespoons butter

1/2 cup shredded cheddar

Bacon pieces

salt and pepper



Bake potatoes 375 degrees 1 hour, let cool for 10 minutes. Carefully, cut lengthwise and scoop the flesh into a large bowl; save skins.


To the potato flesh add sour cream, milk, butter, salt, pepper, 1/4 cup cheese Mix with a hand mixer until well blended and creamy.


Spoon the mixture into the potato skins. Top each with remaining cheese and bacon.


Bake for another 20 minutes.

DSCF0199These were really good! I’ve never had twice baked potatoes before and I thought that they were more complicated to make than this. I will definitely add these to the normal meal list.
